Beef Freezer Meals

Enchilada Casserole 8x8
*3 part recipe
1. crushed tortilla chips
2. meat/sauce
3. cheese

Prep:
brown ground beef with onions
grate cheese

Ingredients:

Meat and Sauce:
1 lb ground beef
1 onion
1 can enchilada sauce
1 can mushrooms optional
1 can cream of mushroom soup
green onions optional
1 can green chillies

Other:
2-4 cups mozarella/chedder cheese
crushed tortilla chips

Directions:
Mix meat and sauce mixture and then place in a freezer bag. Place cheese and chips into seperate freezer bags.

Defrost:
refrigerator overnight

Assemble:
Layer chips, meat sauce, and cheese two times. Top with cheese and chips.

Cook:
Bake at 350 degrees for 20 minutes or until bubbly.

Meat Loaf
*2 part recipe
1. meat
2. sauce

Prep:
chop onion
grate cheese

Ingredients:

Loaf:
1 lb beef
1 egg
3/4 cup milk
1 cup cheese
1/2 cup quick oats
1/2 cup onion
1 tsp salt

Sauce:
2/3 cup ketchup
1/2 cup brown sugar
1 1/2 tsp mustard

Directions:
Mix loaf ingredients together and then place in freezer bag. Stir sauce ingredients togther and then place in freezer bag.

Defrost:
refrigerator overnight

Assemble:
Place meat in pan and cover with sauce.

Cook:
Bake 350 degrees for 45 minutes to an hour.
